- 1 Cup self-raising flour
- pinch salt
- 1 cup coconut
- 125g margarine or butter
- 1/4 cup brown sugar
- 1/2 cup white sugar
- 1/2 cup milk
- 2 eggs
Icing
- 1 cup icing sugar mixture
- 1 teaspoon margarine
- Lemon juice to taste
- Put flour, salt and coconut into a bowl.
- Melt margarine and sugars together in a saucepan.
- Add to flour mixture and stir well.
- Beat the eggs with the milk and add to the mixture. Combine well.
- Pour into a greased lamington tin and cook at 190C for 18-20 mins.
- To make the icing, combine icing ingredients and mix well.
- Add warm water until desired consistency is obtained.
- While still warm ice the lemon icing and top with extra coconut.
- Cut & Eat.....YUMMO
